All our ovens come with a two-year guarantee that covers all types of breakdowns due to faulty parts, manufacturing problems or premature wear, even if these events occur infrequently.
Residential ovens
Alfa was born as a manufacturer of traditional wood-burning ovens and, from the outset, has focussed on improving refractory materials to obtain better thermal performance. Today, Alfa produces high calibre commercial and residential ovens and has renewed the domestic sector with the development of Forninox™ technology.
So we came up with the idea of insulating a refractory wood-burning oven by lining it with layers of stainless steel. This allowed us to improve the appliance's thermal performance, drastically reduce its weight and facilitate its mobility by adding heavy-duty castors.
Alpha ovens produced using this technology have much lower energy consumption than competing products and take less time to reach cooking temperature.
Alfa steel ovens are simpler to use than traditional refractory ovens, as you can control the fire more easily thanks to their compact structure which allows hot air to circulate inside them and maximise heat during cooking. What's more, their low weight makes them suitable for a variety of uses.
Practically everywhere. The steel ovens come in a mobile version with castors so they can be used on the terrace, in the garden and then placed inside during the winter months. Our range also includes small models if you don't have enough space. With the tiny ONE compact pizza oven, you can even bake on your balcony.
Gas ovens can be connected to the gas supply or to an LPG cylinder.
To install an Alfa steel oven, just follow a few simple steps:
Place the base of the structure.
Insert the chimney cover into the flue.
Place the chimney cover and the chimney on the oven dome.
If you have a wood-fired oven you can start using it straight away, while if you have a gas (or hybrid) model you should make sure to connect it to the gas mains or LPG cylinder using the supplied hose and fixing with a clamp. If you want to make your own traditional pizza oven, things are a little more complicated, as you'll have to build a brick and concrete foundation, assemble the different parts of the dome and line the oven with additional refractory material. For a gas oven, simply turn the knob, press the ignition button and adjust the flame. If you have a wood-burning oven, build a fire in the centre of the oven using some dry sticks and then add a few pieces of wood as the fire burns down. Then add a few logs about 5-10 cm in diameter to form enough embers.
Obviously, the larger the oven, the more wood you'll need to reach the cooking temperature. In larger models, we recommend moving the fire across the entire floor of the oven to heat it evenly. Use dry, seasoned wood to avoid the thick, black smoke that can spoil your dishes.
When lighting the wood-fired oven, heat needs to be generated gradually up to a temperature of around 300°C (570°F) to dry out the moisture and gently "season" the oven's refractories so that they can provide excellent cooking results.
In terms of warmth and aromatic value, the best wood species are oak and beech. Never use evergreen wood, which burns quickly and can leave heavy deposits of soot and creosote. Find out more about this by reading our blog article on choosing firewood with the best calorific value.
Almost anything. Thanks to the very high temperatures they reach, Alfa ovens are particularly suitable for baking Neapolitan pizza in about a minute at 450°C (840°F), but there's nothing to stop you using them at lower temperatures to cook bread, roasts, fish, vegetables, puddings and other trimmings. You can bake any type of pizza in our ovens. Remember, however, that the pizza pan cooks at a lower temperature. Don't be afraid to try to control the operation of your oven.
Keeping your oven clean guarantees safety and better performance. Between two cooking sessions, simply scrub the oven floor with a brush to remove food residue and burnt flour; for a more thorough clean, let the oven cool down and use a damp cloth to wipe away burnt food. If you have a wood-burning oven, remove the ashes with a metal shovel when the oven has cooled down completely.
Alfa domestic ovens can be customised by choosing the type of fuel (wood, gas or hybrid) or the colour available.
For manufacturing reasons, Alfa cannot make customised ovens, but you will certainly find the model that best suits your needs in our wide range of products.

Commercial ovens
Our commercial steel ovens are the most sought-after appliances to meet your needs, especially if space is scarce (a small bar or a food truck), if you want to improve your restaurant's productivity without incurring large increases in management costs or if you want to lighten the load of your overloaded kitchen by adding an outdoor oven to increase seating capacity on fine weather days.
Commercial ovens are generally larger and more efficient than domestic ovens, as they have to withstand high stresses due to the high volume of production and greater frequency of use.
For commercial steel furnaces, there are 4 options:
- Madeira
- Gas (Natural Gas or LPG)
- Hybrid (wood and gas)
- Electrical
For manufacturing reasons, Alfa cannot make customised ovens, but you will certainly find the model that best suits your needs in our wide range of products. Most commercial models come in two versions, large and small, to satisfy even the most important production needs.
You can personalise most of the models in the commercial range by choosing from the different colours available. You can also choose the type of fuel (wood, gas, electric or hybrid).

Alfa's main technological achievements are:
- Forninox ™ technology: the structure is covered by a steel dome which increases thermal insulation and makes the oven more energy efficient. The ensuing weight reduction has made it possible to develop ovens that are easy to move.
- Compact Flame Technology: with this innovation, gas ovens reproduce the strong flame of their wood-burning counterparts by controlling the heat provided by radiation. These ovens heat up quickly and reach high temperatures, just like wood-fired ovens.
- Flue System technology ™ : Alfa's latest patent innovation (2019) has to do with a special furnace design that allows the hot air to release all the heat before being dispersed up the chimney. The value of the heat is maximised, thermal efficiency is improved, energy consumption is reduced.
Refractory materials with high thermal efficiency: the building blocks of Alfa's traditional furnaces for over 40 years and still the main success factors in today's STAINLESS steel furnaces.
Alfa steel gas ovens consume much less energy than traditional ovens due to their high thermal efficiency. Some models equipped with the latest Compact Flame technology recreate the strong flame that browns food just as a wood-fired oven would.
Alfa wood-fired pizza ovens consume less energy than their competitors, thanks to the high quality of the refractory materials and the technological innovations that improve their thermal insulation.
Ovens that combine steel and refractory need to burn less wood to give the same result, as they make better use of the heat produced.
Some Alfa models are available in a hybrid version to alternate cooking styles with wood or gas. This is possible thanks to Alfa's hybrid kit that makes the gas burner safely "disappear" when lighting the wood fire in your oven. All Alfa hybrid ovens with Forninox ™ technology consume less fuel, whether they are fuelled by wood or gas. For example, the Quattro Pro commercial oven, which can bake up to 60 pizzas per hour (three at the same time), has an average consumption of:
- 4.5 kg / h of firewood
- 1.35 kg/h of LPG
- 1.80 m 3 / h of natural gas
You can use gas ovens in kitchens equipped with extractor hoods, but you will need to connect them to a chimney to release the smoke from the wood-burning oven.
For decades, Alfa has been making the best refractory bricks as raw material for our traditional high-performance, energy-efficient wood-burning stoves.
As for the steel pizza ovens, we coat the refractory cooking chamber with three layers of different types of stainless steel and apply three extra layers of powder to give them more resistance to the weather.
Our traditional wood-burning ovens have a 10 cm thick dome (twice the average thickness) made of highly resistant refractory materials to keep the heat in for longer and extend your cooking sessions.
Fulfilling orders quickly in a small place like a food truck isn't easy, but Alfa steel ovens are well suited to the restaurant business on wheels, as they are light and easy to handle. A hybrid or gas oven can be the winning solution for this type of business.
Normally, restaurants with a small seating capacity (around thirty covers) don't need large ovens. In this case, opt for a Qubo gas oven or a Quattro Pro , a high-efficiency hybrid oven, if you don't want to stop cooking with wood.
Commercial ovens in the kitchens of large restaurants have to cope with high demand during the short peak hours of everyday life, especially if it's a pizzeria. The most efficient Alfa steel oven is the Opera, which can cook up to 7 pizzas at the same time and around 150 per hour, a hybrid model available with or without a base.
As for traditional refractory ovens, the larger models can bake up to 12 pizzas at once, as is the case with the Pizzaria Especial, a wood or gas oven with a diameter of 160 cm.
